Cheesecake cheesecake how I would love a great slice of thee right now. I basically only eat and love cheesecake from Pebbles Pastries and I use Pebbles as my exclusive provider for cheesecakes and cupcakes for weddings in Jamaica.
My faves are their double chocolate and red velvet. I have not tasted any other cheesecake that can compare. I met Stacie through a friend of mine when she was just starting out and I have been hooked ever since.
When Stacie opened her store at the Pulse Complex on Trafalgar Road in New Kingston I was so proud of her. I have even requested a few personal deliveries when I was pregnant. That’s how hooked I am. I have listened to her plans and dreams for her business and I am looking out to see them come to fruition.
Due to my love of Pebbles Pastries cheesecake Stacie and I have developed a good working relationship as she is always reliable and I have never been disappointed, and whenever anyone wants cheesecake I send them to her and I have also used her for wedding cupcakes, which were delish.
So I know I had to feature Stacie and her company Pebbles Pastries on the blog.
Below is my conversation with Stacie:
Helen G: Stacie how did Pebbles Pastries come into existence?
Stacie: Pebbles Pastries blossomed out of a desire and passion to satisfy the cravings of cake and cheesecake lovers with high quality products at an affordable price.
It took years of fine tuning, experimenting and testing my own recipes on friends and family to uncover the perfect balance of flavours and textures. The very positive response received from my friends and family gave me the courage to start Pebbles Pastries, and the response of customers has given me the drive to continue to improve existing recipes and add new ones to my repertoire.
Pebble’s Pastries currently offers over 30 types of cheesecakes in 5 different sizes, Bavarian Cream and mousse cakes as well as cupcakes. Â We also offer wedding cakes.
Helen G:Â What is your background?
Stacie:Â I have a Degree in Finance and Banking from the University of Technology and worked in banking for years. Â A Certificate in Cake and Pastry Making from B & E Institute and a Certificate in Sugar Craft from McKenzie Institute of Culinary Arts.
Helen G:Â Who or what motivated you to start your business?
Stacie:Â I have always baked cakes but one day my husband asked me to bake him a flavored cheesecake since he was tired of the plain cheesecake with cherries that is always offered for dessert. Â After lots of research and tastings and request from friends we decided that starting a bakery that specializes in cheesecake would be a great idea.
Helen G:Â Other than the money what types of satisfaction do you get out of your work?
Stacie:Â Creating and testing new cakes and cheesecake combinations and knowing that I have a desire to succeed in whatever I am doing.
Helen G:Â What motivates you on a day-to-day basis?
Stacie:Â Knowing that I am making someone’s day when they have tasted one of our cakes.
Helen G:Â Do you have any hobbies?
Stacie:Â Reading.
Helen G: Seven days, six nights, all expense paid, my vacation destination is…
Stacie:Â Any all-inclusive resort with a beach, good food and lots of sun in the Mediterranean.
Helen G:  My favorite guilty pleasure is…
Stacie:Â Ice Cream with lots of whipping cream
Helen G:Â Somehow I thought you would say cheesecake.
Helen G: My favorite Jamaican food is…
Stacie:Â Oxtail with rice and peas and manish water
