In August, the resort welcomed a new, award-winning executive chef, Michael Barnett, to oversee its culinary program. Chef Barnett is from Jamaica, studied culinary arts and has worked at a variety of resorts across the island since 2000. Throughout his career, he has won awards for his culinary preparations, including “Best Cuisine on the Island” in 2016 and “Chef of the Year” for Taste of Jamaica in 2017. He was also appointed as the island’s first Culinary Ambassador by Jamaica’s minister of tourism in 2018.

Skilled in many different cooking techniques, Barnett enjoys using ingredients that are indigenous to Jamaica but also likes to incorporate foods from other parts of the world. With his fusion cooking style, he creates menus that embraces Jamaica’s motto, “Out of Many, One People.” This is a culturally diverse country, and guests at Sunset at the Palms will find an equally diverse menu that features foods representative of places like Africa, Asia, Europe, Latin America, the Middle East, and more.

Sunset at the Palms is the home of “sensory magic” and as such encourages guests to use all their senses. They’re able to see, smell, touch, taste and even hear their food, which makes for a very immersive experience … especially during the Chef’s Showcase dinners, at which the culinary team gets to step out from behind the scenes to create a very memorable dining event. Though the Showcase is available at no additional cost to guests, it does require advance reservations that can be made through a personal concierge.

With a wide range of incredible local ingredients to showcase — including ackee, honey banana, jackfruit, lemongrass, mango and more – Barnett’s favorite dish to prepare is a jerked chicken leg and thigh stuffed with callaloo and glazed with a jerked guava sauce. It’s just one of many possible dishes that resort guests can look forward to trying during their stay.

Besides participating in the Chef’s Showcase, guests can choose from dining at Palm Grove Restaurant, which features buffet-style Caribbean and international cuisine; Lotus Leaf Restaurant, which offers an a la carte fusion menu with a Caribbean flair; Palm Breeze Beach Bar & Grill, which is home to grilled favorites and refreshing cocktails; the Bamboo Bar for tropical concoctions; the Irie Martini Bar, featuring Jamaica’s own Appleton Estate rum; and Blue Coffee Café, which serves freshly brewed Blue Mountain coffee. The resort also offers themed dinners, including a BBQ night on the beach. 

Sunset at the Palms offers 85 air-conditioned, treehouse-style guestrooms with chic, Asian-inspired furnishings and private balconies.
